#20sb Cooking Challenge: Simple Summer Supper

So I decided to film my endeavor, try not to poke TOO
much fun at me, after all, I’m not a chef.
Well, and this was my first go at something like this 😀

Simple Summer Supper:
Chicken Couscous Salad

//Ingredients:
2 Chicken Breasts
(or four thighs if you like dark meat better!)
1/4 almonds (sliced or slivered)
1 cup couscous + 1 cup water
1 pint Cherry Tomatoes (diced)
1/2 to 3/4 cup Feta Cheese (crumbled)
2 tbsps Olive Oil (divided)
1 1/2 tbsp Apple Cider or Balsamic Vinegar
1/2 tsp sugar
Hot Sauce (to taste)
Salt
Pepper

//The How-To:

1// toast almonds in a dry saute pan, tossing gently
every-so-often to keep from burning. When golden,
remove from pan and cool. Set aside.

2// Heat 1 tablespoon of oil in pan.  Cut chicken into bite-sized pieces,
season with salt and pepper, and cool over medium high head until done.
(make sure you cut into a larger chunk to check for doneness! raw chicken is a total party killer)
Remove from heat and cool.

3// While chicken is cooking put couscous, water and a dash of salt into
a saucepan, bring to a boil, cover, turn off heat and set timer for five minutes.
After five minutes fluff and pour couscous into a bowl to cool.

4// Whisk together remaining olive oil, vinegar, sugar, and hot sauce in a small bowl.

5// Add tomatoes and chicken to couscous, pour dressing over and toss.
Add remaining ingredients, tossing after each addition.

Enjoy!!

Approximate active cooking time: 27 minutes!

Blogger’s note: You can do a LOT of this ahead of time, like toasting the almonds,
or even using leftover couscous.  Also feel free to add other veggies or switch up the meat!
This salad is about using what you have on hand to make something yummy 😀
